Hard Rock Cafe Tupelo Chicken Tenders

   
Honey Mustard Dipping Sauce
¼ cup mayo
1 ½ teaspoons prepared mustard
2 teaspoons honey
Pinch paprika

 

Ingredients

1 cup corn flakes or Panko bread crumbs

2 teaspoons crushed red pepper flakes

1 ¼ teaspoons cayenne pepper

1 teaspoon cumin

1 teaspoon salt

½ teaspoon paprika

¼ teaspoon onion powder

dash garlic

1 egg

1 cup milk

1 cup flour

1 pound chicken breast fillets

 

1)      Preheat oil in a deep fryer to 350˚ F

 

2)      Prepare the breading by combing the corn flake crumbs, crushed red pepper

        places, cayenne pepper, cumin, salt, paprika, onion powder, and garlic in a bowl.

 

3)      Beat the egg in a bowl. Add 1 cup of milk and stir.

 

4)      Place flower in another bowl.

 

5)      Slice each chicken breast lengthwise into strips about ½ - inch wide.

 

6)      When the oil is hot, bread your chicken strips by:

a.      Coat each strip with flour

b.      Dip into egg/milk mixture then back into the flour

c.      Dip again in the egg/milk mixture then into the corn flake crumb mixture.

d.      Be sure to coat each piece thoroughly with corn flake mixture

 

7)      Fry 6-8 pieces at a time for 4-5 minutes or until the chicken is golden brown.

              Drain and serve the chicken with honey mustard dipping sauce.
