Spicy Fried Shrimp (Bang-Bang???)

Rumor has it that this is the actual recipe from Bonefish Grill!!!

It was passed on to me by a friend.

If it is the actual recipe or not, it is VERY close to what you get when you order

Bang Bang Shrimp which is one of their signature appetizers! Yummmmmmy!!!!!!!

 

Note: This recipe does not reheat well. Only fix what you think you will consume at one meal.

 

Sauce   

 

½ Cup Mayo

4 teaspoons chili garlic sauce (Sambal Sauce) Available at Albertsons on the Asian food isle.

1 teaspoon granulated sugar

½ teaspoon rice vinegar Available at Albertsons on the Asian food isle

 

Note - I think there is one thing missing from this recipe and that is wasabi. Next time I make it I'll try adding a very small amount to the recipe to see if it makes a difference. I really think it is missing one ingredient that gives that zing that you experience at the Lafayette location of Bonefish, however I can't imagine them making it different than the entire chain. If you add wasabi, be careful because a little wasabi goes a longs way! Add it with caution.

 

Breading for shrimp  

 

1-egg, beaten

1-cup milk

¾ cup all-purpose flour

½ cup panko breadcrumbs Available at Albertsons but it's not on the Asian food isle.

1-teaspoon salt

½ teaspoon ground black pepper

½ teaspoon rubbed ground sage

¼ teaspoon onion powder

¼ teaspoon garlic powder

¼ teaspoon dried basil

                          

8 to 12 cups vegetable shortening or oil

16 to 18 medium shrimp, peeled and deveined

(I use the medium frozen shrimp from Sam's Club. You get 3 pounds for about $11 and they are the perfect size for this recipe. If you use the entire bag of shrimp you will need to use about 3-4 times the amounts above to make a sufficient amount of sauce.)

 

Garnish

1 handful of mixed greens

1 green onion, chopped (green part only)

 

Process:

 

1)  1-Combine all ingredients for sauce in a small bowl. Cover the bowl and set aside.

 

2) 2-Combine the beaten egg with milk in a shallow bowl. Mix Flour, Panko, salt, black pepper, sage, onion powder.

 

3) 3-Heat shortening or oil to 350º F. Use the amount of oil required by your fryer.

)  4-Bread the shrimp by first coating each with the breading. Dip breaded shrimp into the egg and milk mixture, and then dip it back into the breading. Arrange the coated shrimp on a plate and place them into the refrigerator for 30-minutes or longer. This will help the breading to stick to the shrimp when they are frying.

   5-When the oil is at 350º fry the shrimp for 3-4 minutes or until they are golden brown. Drain on paper towels. When all of the shrimp have been fried, drop the shrimp into a large bowl. Spoon about ¼ cup of the sauce over the shrimp and gently stir to coat. Stack the shrimp on a bed of mixed greens, then sprinkle the stack with the shopped onion.
